Gluten Free Pie Crust

I made two different pies from this crust and it is absolutely delicious. The first one turned out better as I was a little bit less stressed for time. My advice to you–always clear out your schedule for pie time…you won’t regret it. I don’t mean to scare anyone… a good 2-3 hours should be fine.

Experiment with different fillings, so far I have tried rhubarb peach (so delicious) and blueberry peach. I made a double batch for both, one for the top crust and one for the bottom crust, make sure you press the two layers together well or you will have an oven of gooey fruity soup to clean up…
